Speedy Spud Soup
1/2 cup finely chopped white onion
1Tbsp butter
1/2 cup chopped ham-lunch meat works fine
3 cups milk
1 pkg Idahoan Garlic and Herb mashed potato's
Salt and Pepper to taste
Tony Chachere's or Zatarain's Creole Seasoning to taste (start small)
3/4 cup grated cheddar cheese
In a medium sauce pan melt butter and saute onion until very soft. Add ham and cook until lightly browned. Add milk and bring just to a boil. Stir in mashed potato's and remove from heat, stirring until thickened. Add seasonings and grated cheese. Extra milk may be needed to thin or make it the consistency you prefer. Serves 4

Gratitude......
Cooking and baking are not my favorite things to do, but after a year of using (or not using) a toaster oven I am really grateful for my full sized oven! I am also grateful for a great bread recipe and for a husband who did not give up on me when everything I baked that required yeast turned into "road apples"!
